First, let's get something straight. Most of you have probably seen the "Taste Map" of the tongue presented to you before? I even recently saw a tongue taste map in the September issue of Seattle magazine, and it is all wrong.

There are 5 known "tastes" that humans can detect with all parts of their tongues more or less equally:
- Salty
- Sweet
- Bitter
- Sour
- Umami
On this recent taste journey I have been tasting everything by itself. This is my attempt to really single out flavors. What do onions really taste like? What does chervil really taste like? What does grass taste like? What does fresh cream taste like? Since I have started doing this I have found that I am venturing down a new path of being able to discern individual tastes within complex flavors. I am now noticing blueberries in my coffee, mushrooms in my wine, and loganberries in my chocolate. What fun.

Mushrooms in your wine, eh? I can see the enjoyment of noticing the different aspects when training your palate... but it seems there may be a few tastes that are best left undiscovered in what are otherwise enjoyable flavors. Grass may also be on the list for me.
Nonetheless, in my book you have earned the right to post blogs about blueberries in coffee, mushrooms in wine, and loganberries in chocolate.
