Danish Puff Pastry

As much as I love to eat, cook, smell, and taste food, you would never be able to tell from my blog. I seldom make the time to write about the food I cook or enjoy, but it is not from a lack of desire. This current election has kept me busy researching a number of issues and keeping people from spreading partial truths, but it has not kept me out of the kitchen.

Yesterday I made one of my all time favorite desserts: Danish Puff Pastry. I have been making this dessert since I was ~10 years old, and with a cup of coffee it always satisfies (even if you don't include the coffee). The recipe is from (of all places) the classic, red covered, Betty Crocker cookbook.

There is something so simple and yet profound about a butter crust and choux pastry drizzled with icing sugar frosting and topped off with blanched toasted almonds.
